I suspect if Sephiroth did suffer from fear, anxiety, or any of the other little human weaknesses we're all prey to, he would have been conditioned very early on in life to conceal the physical symptoms of same. After all, Hojo's prize prototype deity can't be affected by mere human flaws such as those - he has to be perfect. So I'm sure Sephiroth learned at a very young age to conceal any fear, nervousness, anxiety, worry or any other negative (or positive) emotion behind the impassive mask he wears for so much of the time.
