I do tend to be cooking large amounts of food, and chucking leftovers into the fridge or the freezer as much as I can. The problem is mainly with getting to the whole "don't want to do anything like cooking" point of things. The thing I've exhausted there is decision energy, so even getting something out of the fridge and zapping it in the microwave seems like too much work (involves choosing something, and by that point I genuinely can't tell what I want - my inner toddler is turning up her nose at everything).
I've had a bit of success lately with time-shifting preparation (tonight's dinner is going to be lamb soup, from the stock I started Friday; tomorrow night is going to be a sausage pasta bake thing). So I'm going to keep that up during the inter-semester break, and we'll see how things go once we get going in the new semester.
